Is White Chocolate Really Chocolate?

White chocolate is the kind of candy that people either seem to love or hate with no in between. For those who hate it, you’ll often hear the argument that white chocolate isn’t really chocolate. After all, it doesn’t smell like chocolate and it doesn’t look like chocolate, so does it really count? In today’s blog, we answer the question once and for all! What is white chocolate made of?

During the process of making chocolate, cocoa beans are ground down and then heated. As the mixture heats, it turns into a paste that is called chocolate liquor. The liquor is then pressed in order to separate the cocoa solids (which are often turned into cocoa powder) from liquids, which becomes cocoa butter. Cocoa butter has a deliciously chocolate-y smell, but a very mild flavor. Whereas in the process of making both milk and dark chocolate this cocoa butter would later be recombined with cocoa solids, white chocolate does not contain any cocoa solids. Instead, the cocoa butter is mixed with sugar, milk, flavorings such as vanilla, and lecithin which acts as an emulsifier to ensure the ingredients combine into a lusciously smooth finish. Since the recipe does not contain any cocoa solids, some chocolate purists maintain that white chocolate doesn’t really count as chocolate.

So is white chocolate really chocolate or not?

The Merriam Webster dictionary defines chocolate as “a food that is made from cacao beans and that is eaten as candy or used as a flavoring ingredient in other sweet foods.” Given the fact that white chocolate is made from cocoa butter which is derived from cacao beans, we think it’s safe to say that this sweet treat lives up to its name!
