How It’s Made: Fudge

Fudge! It’s a great American pastime.

Fudge! It’s a great American pastime. There are so many different possible fudge flavors that every time you think you’ve seen them all there’s a few new ones. There really is a flavor of fudge for everyone, and you can even get fudge for your vegan friends now, too! But where did this delicious indulgence come from exactly? And how do fudge makers make it so yummy?

A Brief History

Did you know that fudge got its start right here in Baltimore, Maryland? There really weren’t any recorded mentions of fudge before 1886. In those early days, fudge was sold at a small, local grocery store for forty cents per pound. Fudge actually came about as a “fudged” batch of caramels. Historical evidence suggests that someone messed up a batch of caramels, and the results of the mix-up eventually evolved into the creamy confection we enjoy today.

Making Creamy Goodness

All fudge starts with a couple of essential ingredients: milk or cream, sugar, and whatever you will be using to flavor the fudge. Chocolate and peanut butter are two of the most popular flavors, although adventurous chefs everywhere have tried all sorts of unique combinations! Once all of the ingredients are gathered, they are combined and heated to just the right temperature. If they aren’t heated enough, the fudge will have a grainy texture because it wasn’t able to fully melt everything together. If there’s too much heat, you risk burning the fudge.
