What’s the Deal with White Chocolate?

White chocolate has a special flavor, and Wockenfuss loves to celebrate it.

Most people either love white chocolate or hate it. It certainly doesn’t look like milk or dark chocolate. It doesn’t quite smell the same either. When people dig into white chocolate, they shouldn’t be expecting the same experience as they do when they scarf some dark or white chocolate treats. That doesn’t mean that white chocolate doesn’t have its merits though. For those of you that are already white chocolate lovers, you know that it has its own unique flavor that can make taste buds sing. At Wockenfuss Candies, we have several white chocolate delights to satisfy your cravings.

The Process

The beginning steps of creating white chocolate are very similar to the process of creating dark chocolate or milk chocolate. Cacao beans are harvested by hand from countries all over the world, but primarily in Africa. The beans and pulp are removed from their pods and allowed to ferment. The fermenting pulp becomes sweet, and that sweetness seeps into the beans. The pulp is separated out, and the beans are shipped to chocolate makers for processing.

Once the beans are in the hands of chocolate makers, they are roasted, hulled, and crushed into pieces called nibs. The nibs are then heated and ground into a paste which is pressed. The solids go on to become dark and milk chocolate, while the liquids become cocoa butter. Cocoa butter is the key ingredient when it comes to white chocolate. To make the sweet white treat, chocolate makers combine creamy cocoa butter with sugar, milk, and vanilla. It’s as simple as that. The important takeaway here is that white chocolate wouldn’t be possible without the cocoa bean, placing it firmly in the chocolate category.
